I know that my Italian kitchen is spotless but to assure you, the customer that my food and procedures are all above board I get a third party organisation in to check.
SALSA (Safe And Local Supplier Approval) is a non-profit making joint venture operated by the Institute of Food Science and Technology, they audit* our procedures and methods of production to make sure that we are producing safe (but tasty) food that complies with all the current governmental legislation and guidance related to food hygiene and safety.
You will be pleased to know that, even though I don’t use acidity regulators and chemicals to preserve my prodotti, the traditional methods that I use still comply with all current and modern standards.
You can check out for yourself what the very nice people at SALSA are about at the following link (http://www.salsafood.co.uk/about.php?p=1)
* SALSA certification is only granted to suppliers who are able to demonstrate to an auditor that they are able to produce safe and legal food and are committed to continually meeting the requirements of the SALSA standard.
